How to make a tasty lamb salad

Now that I've hit my thirties, am trying to be more healthy with what I eat. Here's my easy recipe for a tasty lamb salad.

What you need

  • A portion of lamb (I used two small steaks today and cut them into small pieces)
  • Your choice of salad (e.g lettuce, red onions, croutons, carrots, cucumbers, etc)
  • Mint herbs/spices
  • Mint sauce
  • Wok (and groundnut oil)

What to do

  • Put about a tablespoon of olive oil into a bowl
  • Mix in a handful of mint herbs, salt and pepper (you could also add chilli flakes for some hot flavour if you like)
  • Throw in the lamb and use your hands to rub in the mixture, let it marinate (the longer the more flavour - I had two left over so leaving in the fridge overnight)
  • Prepare your salad how you like it
  • Heat up your wok and add some groundnut oil (you could use any oil really but I prefer this in my wok)
  • Throw in your lamb and keep stirring/moving it constantly until cooked
  • Add a drizzle of mint sauce over the cooked meat
  • Allow to cool for 3 minutes
  • Add to your salad
  • Eat!

If you don't have mint sauce use something else; BBQ sauce, Peri Peri, red wine?! Suggestions welcome in comments below.
